Oh Zucchini, how we love to hate you!

There are many Zucchini found in and around the Farm these days and even the Farmer’s Wife is having difficulty coming up with ways to prepare them. There’s the bread (of course) both with blueberries and lemon and without. There’s sauteed with a bit of butter and topped with fresh herbs. There’s stuffed, zoodled, and grilled (actually, the zoodling isn’t too bad). Finally, the pigs and chickens have had (more than) there share. But, above all things the Farmer’s Wife hates waste, so she is determined to find a new and wonderful way to (hide) zucchini into all the wonderful meals made here on the Farm. And here is what she did:

She dried them into chips that she coated in all sorts of flavors. And this is how it was done. The young zucchini (and only the young zucchini) were washed and sliced in rounds. Now. On the Farm they have a fancy-smancy dehydrator, so the slices were placed on trays and set in there at one hundred and twenty for ten hours or so. If you don’t have a fancy-smancy dehydrator on your Farm, you can simply set your slices out in the sun on a parchmented tray and flip after ten hours or so. But don’t and I repeat DO NOT leave them out overnight. All that dew will ruin your good work. The chips are then put in a food grade five gallon tub (yes, she makes lots of these) until a Snack is needed. At which time they are pulled out and tossed with a bit of seasoning, whichever may suit her mood. Here are some of her favorites:

a bit of salt and pepper, dried mushroom powder, parmesan cheese

a blend of dried oregano, basil, and thyme, salt and pepper

cheddar cheese powder, dried bacon bits, salt and pepper
